Crunchy Cookies
I like cookies or biscuits which are crunchy. Having them with coffee gives me joy. Life can be simple and a pleasure when you enjoy it with your loved ones.
I baked these cookies with the ingredients that are in any pantry. Easy to make, few ingredients and delicious crisp cookies.
Of late, I have used cardamom in some of my dishes. It lends a sweet aroma and tastes nice. Cardamom has been used in Indian cuisine both for the sweet and savory dishes. We grow up eating it in puddings and cakes and in different curries or rice dishes like biryani and pulao. This is one ingredient that you cannot miss in Indian cuisine. It is used all over India, in all homes making it an inseparable part of Indian cooking. So.. let's go to the kitchen and make our cookies ..
Ingredients :
Sugar - 4 tbsps.
Salt - 1/2 tsp.
Unsalted butter, cold cut into cubes - 3 tbsps.
Shortening - 3 tbsps.
Baking powder - 1/2 tsp.
Cardamom powder - 2 tsps.
Cold water - 4-6 tbsps.
Mix the flour, cornflour, sugar, salt, baking powder and the cardamom powder together. Cut the butter into small cubes. Mix the butter cubes and the shortening into the flour mixture till the mixture resembles like breadcrumbs. Mix well. Gradually mix in water, a tbsp. at a time, to form a soft dough.
Keep the dough in the fridge for 30 mins.
Roll out the dough and cut into any shape with a cookie cutter. Preheat the oven to 350 F.
Bake for 20-30 mins. until the sides turn golden in color. Transfer the cookies to a cooling rack.
Enjoy when they cool completely.
